This recipe is dedicated to three people. First, are those who have been DM-ing me, even commenting on all the latest recipe to tell me they are missing the Mithai posts! Second, my husband who has spent significant time in Bangalore, and third is me, because i overcame the demotivation that had crept in owing to the heat and humidity, to recreate any sweet, since a long time. 😬 . Mysurpa, is the termed as the Melting Magic. This rich, and creamy version of the traditional Mysore Pak requires no special equipments, and only three ingredients - Besan, Sugar, Ghee! . This simple and nutritious Gujarati snack has received a lot of cultural flak from the debauched non-foodloving people across the globe for the sound of its name. The etmology of Muthiya comes from the action of rolling them into form in your palms, also known as 'muththi'. Made with Amaranth/Rajgira Leaves, this recipe is vanilla. You can substitute the Amaranth with any vegetable (finely chopped, or grated) and make a version of your own. It's a complete meal! Saved in the highlights. Do add aachar masala (methi no masalo). So, we have been recounting our journey of last 8years during this birthday week, for @foodaholicsinahmedabad . One of the stories had the picture of our gol-dhana which I had made. I got a string of inboxes wanting to know the how. Here you go! You use the white jaggery, pound it in a mortar and pestle until malleable. Form tiny pedas out of it. In a bowl, warm one tbsp of milk and add kesar strands to it. Allow the color to bleed. With this yellow milk, put teekas onto your jaggery pedas and place one or half strand of kesar on each. Now, place two whole coriander seeds atop each pedha. Gol Dhana is a Gujarati Ritual to confirm the coming together of a couple and their respective families. When we cannot decide on one perfect angle, I end up posting both.. because rarely do I have the patience and the luxury to get two good pictures! Here is my freshly made batch of Baaflo! A Gujarati term for Aam Panna. Traditionally, the whole Keri is cooked over coal fire, like you would, a baingan (for bharta). But in contemporary times, we simply pressure cook it. Method: Peel, chop, and boil Totapuri Raw Mango. Choose this breed, since it takes less sugar for sweetening. Allow it to cool down. In a wet mixer jar, add the mango cubes, sugar to taste, (conventionally, jaggery is used), cardamom, saffron, and black salt. Blitz it a few times. Store it in a glass jar. When in a mood, add two spoonfuls of this concentrate alongwith ice cold water, and reminisce the yester years when you were welcomed with this at home, after school. Each household has its own trace!
