The Jambalaya Bowl - a reflection of the intercultural exchange of American and African cuisine and how well-complementing they are! Jambalaya is an African preparation of rice that is cooked with vegetables and meat. You need to eat this bowl in 3 steps, each time! 1. Why would the French - who are infamous for being patient and passionate for all-things-food, invent a quick-fix like the Baguette?! The rarest of the rare encounters with good baguettes in the city, have had us asking this question; and one of the most popular (and secretly, our favourite) story is - There was a point in time when the law had forbidden Bakers to wake up before 4am (Yup! This unlocks a whole universe of questions!) Now, traditional French breads take a long time to rise, and with this absurd law in place, getting fresh bread, early morning, would've been impossible. So the bakers deviced a recipe which would take lesser time to rise (lean dough); these loaves were thinner and longer than the other breads - which was done to reduce the time it took to bake the breads evenly! This quick-fix bread is what we now know as the French Baguette! There's an alternate theory which says that the handy and (literally) pocket-friendly Baguette was invented to stop the French metro workers from having to carry their knives (to cut the breads, ofcourse!) to work, to avoid mishaps in case of fights. I have a request for you. Before you begin reading, go take a good look at the photo of the bread; a long stare at everything about the bread. Thanks for doing that. Now think about the first time you had a proper bread; and I don't mean the whole-wheat/multi-grain kinds. No. The good old bread that you pop into the toaster, take it out as soon as it gets golden brown and while it's still hot, get some room-temperature butter to evenly spread on it. And quickly take a bite of the crunchy-yet-super-soft-inside slice, hoping that it's still warm. This bread has a slight sweetness to it, which is just the right amount to balance out the hint of salt in the butter. If I had to recommend just one type of bread for the perfect toast (I LOVE my toast! incase, if it wasn't clear already..) it would be this one - The Shokupan. Shokupan, often mistaken for its sweeter cousin, Hokkaido, saw the light of the day around the 2nd World War. Scarcity of rice, influence of the Americans and an overall relaxed acceptance towards a foreign culture led to the introduction of this bread, which became a school-cafetaria staple in no time! Shokupan (Shoku, meaning Food & Pan meaning Bread) is a super-soft bread; the Japanese term for this kind of a texture is called 'Mochi-Mochi' (I immediately correlated it to Gujarati way of saying 'Pochi-Pochi bread' 🙈) The crust of the bread is very fragrant, owing to the eggs used in its making. @lily_pond_bakery in Ahmedabad, makes this bread on a specific day, every week and we can't thank them enough for doing so. Found the Galauti Kebabs from the Original Tunday Kababi of Lucknow, right here at @magsongourmetfoods 3-4 minutes in microwave and you have the melting galauti at your mercy! Allow us to indulge you with a lil history of these kebabs! The Galauti Kebab a.k.a The Galawati Kebab originated from the mysterious (Yes, mysterious, because the food has that depth of flavors!) City of Lucknow, which also became the Capital of Awadhi Cuisine, out of sheer Love for food of Nawab Asaf Ud Dowlah, also known as the 'Toothless Nawab'. Legend has that the Nawab, who's waistline preceded his reputation, presented his khansama with a challenge to make a kebab that could be eaten.. well.. Toothless! (Especially since the Nawab had lost all his teeth due to old-age. inspiring spirit, that is) So after permutations of over a 100 spices and ingredients, he finally came up with this one-of-a-kind Kebab, The Galauti Kebab (Galauti - Hindi : Jo muh mein gal jaae. English : Melt-in-the-mouth) that continues to blow everyone's mind across the globe irrespective of the status of their denture! The lamb meat is supposed to be pounded to an extent that it becomes a pulp. The new-er technique although, has messed up the age-old one, with the introduction of a mincer. The magic that happens with the Thor-like hammer, although, cannot be replicated. The meat holds itself much better with the older method; the use of a mincer may require some sort of a binder that would be needed to be added, like egg or some recipes also say breadcrumbs (Kaamchor Alert!). Once its brought to paste the ingredients are added alongwith raw-papaya paste, which acts as a natural meat-tenderizer. The kebabs are then fried to perfection in Ghee. The Kebab is so soft, that it falls apart if one tries to hold it with the fingers! The last time we ate at @harrys.kitchen was at this cozy place near Vastrapur lake. The sandwich had blown our minds with it's simplicity and eventually it became our beckon call for quick and light snack. Between then and now, @harrys.kitchen has seen quite the upgrades - A menu revamp with plenty of options and a complete overhaul with the new address at Drive-in. Although, a couple of things seem to be unshakeable here - Harsh's ever so humble soul and his absolute dedication to serving the city with good food! Roughly ten days ago we had a bout of multiple cravings, all at once. So we decided to order-in from the trusted @harrys.kitchen We ordered a dinner-for-2 (which might look like a dinner for 4. Optical Illusion.) - Bombay Bhel - Butter Bread Bhaji - Tandoori Momos - Italian Pizza - Dahi Papdi Chaat (not in the picture) - Cheese Garlic Bread. A special mention to the fact that he makes the momos from scratch (as against the popular habit of using frozen ones) One bite of it, and we could tell the difference. So will you! The entire meal was on point and enjoyable. There was, also, a slight bit of a mishap. The delivery guy had missed picking up a sev-mamra for the bhel. Now before we could realise it, and let Harsh know that our Gujju household is forever stocked up with this critical chai-accompaniment, we had received a message from him that he was on his way to deliver it. Since, Calcutta was the epicenter of all British action in India, it is believed that the Malai Cheeni Toast breathed it's first in the city and while the unsalted-ness of the sugared Toast isn't something that the British really enjoyed, it was as if the Indian tastebuds were waiting for the local and familiar version of the Meringue-peaked-toast; and thus chai found it's long-lost brother in the bylanes of Calcutta. I have been ogling at their ghee roast mushroom burger on Instagram! They are a take-away only kitchen and not active on Swiggy-Zomato. I was smoothly navigated from Instagram to Whatsapp for the entire process, right from Menu-sharing to Order Taking to Payment, et al. We ordered the following from their very crisp, non-confusing, menu. Veg Galouti Kebabs with Mint-Coriander Chutney 130 It was so well seasoned, the mouthfeel was great! The chutney was ‘oolala’ fresh.. minty and lemony! Ghee Roast Mushroom Sliders with Purple Cabbage slaw (Serves 2) 160 Finally we met, after all that online stalking. I was delighted! Savoured the ghee roasted mushrooms with the slaw, in the correct proportion to the bread. Blast of flavours! Rasam Aglio-e-Olio with Tomato Paste 170 21GatesKitchen is unabashedly a fushion-food serving place. Fortunately, it is not the cheese on dosa kind of fusion. It’s more like, trying food from two different genres and clubbing them to create a beautiful harmony. This dish was one such successful experiment. Rasam powder spiked Aglio-e-Olio with a generic Tomato Paste from the Peninsular region. I missed the glaring pungency of garlic, other than that, it was so much fun! We Swiggy Genie-d the order!
